Grilled or Roasted Chicken

You don’t want to be too self-indulgent this holiday season, but you can control a lot of your food consumption by hosting your own festive party with healthy choices or bring a tailored dish to keep consumption under control.

This simple Grill or Roasted Chicken recipe is a great example of keeping to your bodybuilding program throughout the holidays.

Depending on the amount of chicken you plan to grill or roast you need to decided the amounts of each ingredient: balsamic vinegar, olive oil and freshly minced herbs mixed to together in a medium bowl.

Marinate boneless chicken for at least 4 - 6 hours, overnight or all day is best. Cook the chicken, slice and place the slices on a platter.  Garnish the platter of chicken with capers, lemon slices and sprigs of fresh herbs.

You can prepare this chicken one to two days in advance and serve at room temperature.
